When Tony Vallone recreated the “Tex” — two classic cheese enchiladas served with a center-cut filet — he knew that he needed just the right wine to pair with its bold flavors.

What better than the 2012 “40th Anniversary” Caymus, a wine from a 96-point vintage (Robert Parker, Jr.)?
